Barefoot In The Sand

We always looked forward to the first day of May each year. We got excited because it was the very first day of the year that we could go barefooted after we got out of school! Oh, it felt so good to squish our feet in the sand and let it go through our toes.
May 1st was almost like a ‘rite of passage’ to summertime. It was so good to be able to get up, get out of bed on a Saturday morning and not be confined to shoes. We lived in a sandy portion of land and we could sit for hours making houses, sandcastles and whatever of sand and dirt. It was summer freedom for us.
On one occasion Daddy had to go out to a friend’s farm to pick up some part for his tractor and some of us girls wanted to ride with him. We jumped in the car and off we went. Those were the days when you didn’t have to get strapped in with a seat belt. My older sister didn’t go so she was instructed to tell Momma where we all were.
Once we arrived at the friend’s farm, Daddy went off talking with his chatting and so we got out of the car excited that we would get to walk in that really white fine sand. Of course, we were barefooted. It didn’t take long for us to realize that though we had for many years loved to squish our feet in the sand, this sand was more than hot. Our tender bare feet were burned. The land was right out in the sun without any shade trees. We hurried to get back to the car before Daddy returned, after all, he had told us to stay right there.
I have often wondered if our Daddy ever noticed that for the next few days we were tiptoeing around and mostly staying in the house. The heat in that sand pretty nearly cured our wish to go barefoot for a while.
This summer has seemed especially hot reminiscent of that particular summer when the sand was so hot. It is hard to get excited about cooking even though we have the air conditioning in our homes. It is a good time to try tasty salads.
ANOTHER RECIPE BY MILLIE
CABBAGE & CARROT JELL-O SALAD
- 1 package lime flavored Jell-O
- 1 cup finely shredded cabbage
- ½ cup grated carrots
- ½ cup chopped nuts
Prepare the Jell-O according to package directions; place in refrigerator and allow it to thicken for approximately 30 minutes; blend in the cabbage, carrots and nuts. Return to refrigerator until the Jell-O sets. Place mold on serving plate until the Jell-O falls.
My Mister likes this with cottage cheese and crackers. So simple and so delicious!
